Implementation of Food Recovery on Each Type of Food Retails in Depok
Depok is now considered as one of Metropolitan cities with huge development in Indonesia. This statement leads to a fact that can be seen from the proliferation of various food retails. There are about 114 food retails in Depok. Unfortunately, the proper food waste management cannot balance the rapidly increasing of food retails. Moreover, as the increasing number of visitors, resulted the accumulation of food waste generated. Based on the data collected from one of the food retail located in Margonda, Depok, the largest composition of waste comes from organic waste, which is about 57%. This figure can be suppressed by using food recovery methods. This paper aimed to know how to adapt and apply the food recovery that has been applied in the US. The study was conducted using literature studies and observation approaches. Our focus type of food retails are fast food restaurant, Indonesian regular restaurant, bakery, café, and food stall. Questionnaires were given to staffs who are working in each type of food retails to find out the policies that have been applied by the food retails and the data on food waste and by-products produced per day. From the observation results, it is concluded that almost all food retails have not yet applied food recovery. Thus far, only 1 out of 12 food retail samples we observed that have implemented food recovery, although not done well yet. Whereas, with well management of food waste, the amount of organic waste produced can be reduced up to 98%
